These summer morels only grow in western north america at high elevations making them a much rarer species. They are our favorite variety to work with as they have double walled stems and often grow to large sizes. Because of their stature they are ideal for stuffing and roasting as they hold up extremely well for both preparations. Their flavor tends to be a bit more subtle then black varieties similar to blonde counterparts.

Morels must be cooked thoroughly when using.
