Like porcini, the lobster mushroom’s hearty consistency stands up well to drying. We find this mushroom to rehydrate the best and its texture can be similar to that of fresh. Since it holds up to longer cooking methods its great for cooking in borlotti beans or with lamb shanks. A beautiful, toasted shellfish-like flavor shines through, hence its name.

Lobster mushrooms are in fact not a mushroom at all- they are a bright orange-red mold which attacks a host mushroom. It often grows quite large with a firm texture, white interior and a seafood-like rich flavor. All of Foraged and Found Edibles dried mushrooms are dried at room temperature using fans- omitting heat (used by the vast majority of mushroom drying houses) allows the natural flavor and color of the mushroom to shine.

To reconstitute dried mushrooms, pour simmering water to just cover the mushrooms and let sit for 15-30 minutes. This is best done by barely covering the dried mushrooms with the water, cover with saran wrap(this helps with steaming) and letting it sit and rehydrate for 15 to 30 minutes. You can save the liquid once straining out the mushrooms as a stock, but is best used after pouring through coffee filter or a fine sieve to remove any grit.
